Where the Whisky
Begins.
Meridian Cask sits at the foot of Glen Moriston, on the banks of a river that has supplied our cooling water since 1895. The altitude — just under 300 metres above sea level — keeps the temperature low year-round and the air clean. Both matter to whisky.
The original stone buildings are still in use. The malting floor was decommissioned in 1962, but the kiln house has been restored. The two copper pot stills — a wash still and a spirit still — are original to the distillery and have been repaired by the same coopering family for four generations.
The Water
Drawn from the same spring since 1895. Hard water from the Highland granite. It shapes the wash and the final spirit in ways that cannot be replicated anywhere else.
The Stills
A 12,000-litre wash still and a 7,500-litre spirit still. Both hand-beaten copper. The shape of a still determines the weight and character of the spirit. Ours produce a medium-bodied, fruity new make.
The Maturation
Three dunnage warehouses built into the hillside. Constant temperature. High humidity. The angel's share runs at around 2% per year — high for Scotland, which tells you something about the air up here.
